#1 Shiitake Mushroom Soup

Ingredients:

  • Shiitake Mushroom: 3 Pieces (Medium Size)
  • Olive Oil: 3 tbsp
  • Onion: 1 Piece
  • Garlic: 3 cloves
  • Rosemary: 2 tbsp
  • Pepper: ½ tsp
  • Brandy: ¼ Cup
  • Heavy Wiping Cream: 1 ½ Cup
  • Vegetable or Chicken or Beef broth: 6 Cups
  • Salt to taste
  • Parsley for garnish

Method:

1 Clean the fresh Shiitake mushroom with soft cotton.
2. Remove the stem from the mushroom then slice the head of the mushroom into thin pieces.
3. Use 3 tbsp of olive oil in your pan on medium-high heat,
4. Sautee 1 onion, 3 cloves of garlic, 2 tbsp rosemary.
5. Then add pinch of pepper and salt to taste.
6. Stir for 2 to 3 minutes and then add shiitake mushrooms and stir for 4 to 5 minutes.
7. Cook them down until the juices start to come out.
8. Then, add ¼ cup of brandy. Cook for 2 to 3 minutes.
9. Add 1 ½ cup of heavy whipping cream and add six cups of beef or chicken or vegetable broth.
10. Bring to a boil and cook uncovered for about 15 to 20 minutes.
11. After that we turned the heat to medium-low. Let simmer for 15 to 20 minutes.
12. Take soup and blend it in blender. This helps it become fine and creamy. Put back in your pot and reheat it.
13. Now, soup is ready to serve. You can always add some slices of shiitake and parsley for garnish

#2 How to make dry or fresh Shiitake mushroom

Ingredients:

  • Shiitake Mushroom: 2 Pieces (Medium Size)
  • Extra Virgin Olive Oil: 3 tbsp
  • Salt to taste
  • Parsley for garnish
  • Some Pasta or Sauces (Optional)

Method:

1. Clean the fresh Shiitake mushroom with soft cotton. (for dry Shiitake mushroom, keep it into the warm water about 5 minutes.)
2. Then pour all the water from the bowl and slices the mushroom into the thin pieces.
3. Use 3 tbsp of extra virgin olive oil in your pan on medium heat.
4.Then add mushrooms and pinch of salt and Sautee them.
5. It takes about couple of minutes. They became juicy and tender.
6. Shiitake mushrooms are ready to serve. You can add some pasta and sauces if desired.

#3 Shiitake Omelet

Ingredients:

  • Shiitake Mushroom: 2 Pieces (Medium Size)
  • Egg: 2 Pieces
  • Sesame Oil: 3 tbsp
  • Spring Green Garlic: 2 Pieces
  • Ginger Powder: ½ tsp
  • Black Pepper: ½ tsp
  • Salt to taste

Method:

1. Clean the fresh Shiitake mushroom with soft cotton.
2. Slice into the thin pieces.
3. Use 3 tbsp of sesame oil in your pan on medium-high heat
4. Sautee Shittake mushroom about 2 minutes.
5. Add Chopped spring green garlic and stir for about 1 min.
6. Then add pinch of salt to taste.
7. Crack 2 eggs into a glass mixing bowl and beat them until they turn a pale yellow color then pour over the pan.
8. Add ½ tsp of ginger powder and ½ tsp black pepper.
9. With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there’s no liquid left which should easily slide around on the nonstick surface. If it sticks at all, loosen it with your spatula.
10. Now gently flip the Shiitake Omelets over, using your spatula to ease it over if necessary. Cook for another few seconds, or until there is no uncooked egg left.
11. Gently transfer the finished Shiitake omelet to a plate. Garnish with chopped fresh herbs if desired
